Gazpacho with Cherries



1 kilogram tomatoes (chopped)
220 grams cherries (pitted and chopped)
5 grams green pepper (diced)
5 grams onions (diced)
1 clove garlic (minced)
55 grams bread crumbs
2 tablespoons olive oil
1 tablespoon apple cider vinegar


1Place the tomatoes, cherries, green pepper, onion, garlic, breadcrumbs, and olive oil into a salad bowl. Refrigerate overnight.
2Blend the contents of the bowl in a blender to puree. Refrigerate for at least 2 hours. Stir in the vinegar and salt to taste before serving.
