Mozzarella Bruschetta Chicken
This Mozzarella Bruschetta Chicken pairs really well with a side of Greek Salad with our homemade Easy Greek Balsamic Salad Dressing. Try it for a quick and easy week night meal that everyone will love!
Ingredients
- 1 tbsp. extra-virgin olive oil
- 4 boneless skinless chicken breasts
- kosher salt
- Freshly ground black pepper
- 1 tbsp. Italian seasoning
- 3 cloves garlic, minced
- 2 tbsp. balsamic vinegar
- 15 oz. crushed tomatoes
- 1 tbsp. Freshly Chopped Basil
- pinch of crushed red pepper flakes
- 1 tsp. Italian seasoning or dried oregano
- 4 slices mozzarella
- Freshly chopped parsley, for garnish
Method
Step 1
Heat oil in a skillet over medium heat. Once heated add the chicken and season with salt, pepper, and half the Italian seasoning. Cook 8 minutes, then flip and season other side. Cook 8 minutes more. Remove chicken and place on a plate to let rest.
Step 2
Add garlic to skillet and cook until fragrant, about 1 minute, then add balsamic vinegar to de-glaze pan, scraping up brown bits with a wooden spoon. Add crushed tomatoes, basil, oregano and crushed red pepper flakes and stir until combined and warmed through, approximately 3 minutes.
Step 3
Place chicken back in skillet in the sauce. Place 1 slice of mozzarella on top of each chicken breast and cover with a lid until melted. Garnish with parsley and serve. Serving with a side of Greek salad makes for a easy weeknight meal.
