Make Ahead Breakfast Casserole
This Make Ahead Breakfast Casserole is great! I have to admit I was not sure if I would like it. I thought it may be a little heavy on the stomach as I do not usually eat a lot in the mornings but it was perfect. I have been making this for the last few years for Christmas Breakfast and Easter Breakfast. I quickly put it together the day before and keep it covered in the fridge overnight and cook it the next morning. Sometimes I will even freeze it a few days or couple weeks a head of time.
Here is the ingredients and how I cooked it. Feel free to add some green peppers or red peppers. Zucchini and mushrooms would also be very tasty in this! Ingredients
- 1/2 lb bacon
- 1/2 lb breakfast sausage
- 1/2 tsp black pepper
- 1/4 tsp garlic powder
- 1 tsp hot sauce (optional)
- 4 cups hash browns (completely thawed)
- 1 small onion diced
- 6 beaten eggs
- 1 1/2 cups cottage cheese
- 8 ounces sharp cheddar cheese, shredded
- 8 ounces shredded swiss cheese
Method
Step 1
Cook bacon and sausage. I cut the sausage up and then saute it until cooked through. The bacon you can either fry or bake in oven. I like to do the same with my bacon as I do with the sausage, I cut it into pieces then fry it. Once cooked I always place bacon on paper towel to squeeze the excess grease out of it. Next saute the onion and garlic and any other vegetables you wish to add to the breakfast casserole.
Step 2
Lay the hash browns on the bottom of a 9x13 inch casserole dish.
Step 3
In a large bowl beat the eggs slightly, then add the pepper, onion, garlic, hot sauce, cheese (except about 1/2 cup to leave for top), mix well. Stir in the cottage cheese and then stir in the bacon and sausage, be sure to leave some of the bacon and sausage for the top as well.
Step 4
Pour the egg mixture over the hash browns.
Step 5
Top with the left over bacon, sausage and cheese.
Step 6
If you are going to be cooking this later cover and keep in fridge until half hour before you will be cooking it. You can also freeze it as well.
Step 7
Preheat oven to 350 degrees. Bake the breakfast casserole for about 35 - 40 minutes or until cheese is melted and bubbling and the casserole is set in middle. Once cooked cool for a few minutes then cut and serve.
Another tip that I sometimes do to make things a little faster for when I do make this is I will cook up a bunch of bacon and sausage and then freeze them in the proper amount for the recipe. Then I just have to take it out of freezer and thaw and throw it into the recipe.
